With 4th of July is just around the corner, I’m dreaming about the sizzle of the grill and the smell of charcoal in the air. There’s something magical about cooking outdoors – of course, everything tastes better with a hint of smoke, but I also love how grilling brings everyone together around the fire.

I’ve been planning our 4th of July menu for a few weeks and while I’m still debating between grilled chicken thighs and grilling marinated salmon for the main course, I know that our favorite grilled corn on the cob will be on the menu!

Why Grilled Corn Steals the Show

If you’ve never grilled corn before, the kernels get perfectly tender with beautiful char marks, and the natural sugars caramelize into something absolutely divine. The smoky flavor is impossible to replicate any other way.

I’ve been making grilled corn on the cob this way for years. Kids love it and adults love it, and you can serve it as is with butter, as Mexican grilled corn (elote), or in a grilled corn salad.

Here’s what makes it foolproof: you can grill it in the husk for steamy, tender kernels, or shuck it first for those gorgeous grill marks. (My personal favorite is shucking it first to get those nice grill marks!)

You can also make grilled chicken breast (which I think it just as tasty), and add it to a chicken pesto sandwich or grilled chicken salad.

For seafood lovers, grilled shrimp skewers are always a hit. The key is in the grilled shrimp marinade – it infuses so much flavor in just a short time. If you’re feeling adventurous, grilled fish tacos bring a fun, fresh twist. I also really love this grilled tuna steak (it tastes so meaty!).

While corn and your main proteins are doing their thing, don’t overlook the power of great grilled side dishes. Once you’ve got your corn situation sorted, it’s time to think about the rest of your spread. I love creating a mix of proteins and vegetables that’ll please everyone at the table.

For vegetables, grilled zucchini, grilled green beans, or grilled squash are summer must-haves. I also can’t resist making veggie kabobs – there’s something fun about eating off a stick that makes everything taste better.

Grilled garlic bread is a fun side dish. Sometimes we like making a grilled Caesar salad or these simple grilled potatoes in foil. Or, mix up elote salad with that grilled corn!

Here’s a secret that’ll make your guests do a double-take: make a grilled dessert! We love grilled apples: the heat concentrates their sweetness and adds a subtle smoky note that’s absolutely divine with a scoop of vanilla ice cream.

My Top Grilling Tips for Success

  • Start with the corn. Since grilled corn on the cob is so forgiving, it’s perfect for getting your grill temperature just right while you prep everything else.
  • Prep ahead. Most of your vegetables can be cut hours in advance. Your marinades will be more flavorful when prepped ahead, and you’ll actually get to enjoy your own party.
  • Keep it simple. The best grilled food lets the natural flavors shine. Don’t overcomplicate things – sometimes salt, pepper, and a good olive oil are all you need.
