Smashed potato salad is a delightful twist on the classic potato salad. It features tender potatoes that are smashed and then mixed with a variety of fresh herbs, tangy dressing, and often a hint of mustard. Ingredients:

  • 200g of potatoes
  • 50g of mayonnaise
  • 30g of Greek yogurt
  • 20 g of chopped green onions
  • 10 g of mustard
  • 5 g of salt
  • 5g of pepper

Instructions:

  • Boil the potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and let them cool slightly before placing them in a bowl.
  • Use a masher to lightly smash the potatoes, leaving some chunks for texture.
  • In a separate bowl, mix the mayonnaise, Greek yogurt, mustard, salt, and pepper until well combined.
  • Fold the dressing into the smashed potatoes gently until everything is coated.
  • Add the chopped green onions and give it a final mix.
  • Serve chilled or at room temperature.
